
Yusheng 鱼生 is a Chinese-style raw fish salad. It usually consists of strips of raw fish mixed with shredded vegetables and a variety of sauces and condiments, among other ingredients. Yusheng literally means "raw fish" but since the Chinese relates "fish (鱼)" with its homophone "abundance (余)", eating this dish symbolizes an increase in abundance. Therefore, it is popular in countries like Singapore, Hongkong etc. to eat yusheng during Chinese New Year to welcome abundance, prosperity and vigor. When eating this appetizer dish, chopsticks clash in the air as diners shout out wishes and toss their raw fish salads high into the air.
